The education is institutional: Villa Bissinger in Ay is the region's own wine school, the International Institute for the Wines of Champagne, teaching public initiation courses through professional modules in an 80-seat amphitheatre above a pedagogical cellar of 250-plus references. Forty-five minutes from Paris by TGV, it is the most accessible world wine capital there is.
