Cafayate makes wine where most maps say desert. The Calchaqui Valleys sit at 1,700m and higher, with more than 300 days of sun, almost no rain, and nights that drop sharply from the afternoon heat, and the result is Torrontes, Argentina's signature white, at its most aromatic, alongside dense high-altitude Malbec and Tannat. El Esteco has been making wine here since 1892 and runs tastings, vineyard walks, and evening tastings that end around a bonfire; Piattelli's hillside winery pairs its reserve Torrontes with views over the red rock of the valley. The town itself is compact, wineries start two blocks from the plaza, and the drive in through the Quebrada de las Conchas is one of the great wine-country approaches anywhere.
Best months
Harvest runs February into April and is the most atmospheric window. Spring, September to November, is warm, dry, and quiet. Winter nights are cold at this altitude but tasting rooms stay open year-round. Evening tasting experiences at the larger bodegas book out in high season; reserve ahead.
Getting there & around
Fly to Salta, then drive about three hours south through the Quebrada de las Conchas. Cafayate town is walkable and several wineries sit in or on the edge of town; a rental car opens up the wider Calchaqui Valleys.
