Skopje's Old Bazaar is one of the largest surviving Ottoman market quarters in the Balkans, and eating through it is the best way in: guided food walks thread the hans and hammam lanes through burek bakeries, kebapchinja grills, Turkish coffee roasters, and the Bit Pazar produce market, with tastings folded into the history at each stop. Tours run from traditional breakfast through a proper sit-down lunch, pairing Macedonian wine and rakija along the way, at prices that make a full tasting day cost less than one Western dinner. The bazaar has traded continuously since the 12th century; the food never stopped either.
Best months
Year-round; spring and autumn are the comfortable walking seasons. Tours run three to four hours with substantial tastings, so arrive hungry. Fridays add mosque-quarter bustle, Sundays quiet the lanes.
